One of the best and most popular cocktails, only this time I have given it a fruity vibe. It takes 5 minutes to make. You will definitely not regret making this amazing strawberry Mojito.
Isn’t it awesome how only 2 strawberries completely transforms this cocktail? I think that calls for experimentation, use whatever berry or fruit you like!
Try to use different fruits to change the colours and the flavours of your cocktail. Maybe adding pomegranate juice will be good for Halloween. Perhaps muddling green grapes or adding blended kiwifruit will be good for St Patrick’s day.
Annihilate that mint!
Ok, maybe don’t quite annihilate it, but in order to make a good mojito, you got to rub the mint around the rim of the glass, tear it up and squash it. Why? Well, because doing this releases the oils and the fragrance of the mint. Simply adding the mint doesn’t quite cut it.
How to crush your own ice
I am a blogger who doesn’t want to be naive and just assume that you happen to have a bag of crushed ice. Or a refrigerator that produces crushed ice.
So, all you have to do to make your own crushed ice is wrap your ice cubes in a tea-towel, then just bash the crap out of them. I find that my trusty meat tenderiser does a wonderful job, but anything like that will work. Go get a hammer from the shed if you have to. The more you bash your ice cubes, the smaller bits of ice you get. However, I like my crushed ice to have some big bits and some small bits.
Once your ice is crushed, put it in a bowl or a container and then store in the freezer until your ready to use it. You don’t want it to be melted when it’s time to add it to your cocktail.
Simple syrup
I totally understand if you’re someone who doesn’t want to buy a whole bottle of simple syrup if you think you may only use it once or twice. So instead, you can add a teaspoon of caster sugar. You could just add unrefined sugar but remember it will take longer to dissolve.
You can also make your own simple syrup. The ratio is simple, half water and half sugar. Put the 2 in a pot, get the water hot over the stove. Bring the syrup to a boil, wait for the sugar to dissolve and then turn the heat off. And that’s your simple syrup ready!
If you want to infuse your simple syrup, again, it’s super easy. Just get the fruit, the herb or whatever you’re using, then add it to your syrup while it’s still nice and hot. For example, I had leftover mint and lime peel. So I made my syrup by boiling the water and the sugar together. Then, as soon as I turned the heat off, I added the lime peel and the mint.
Allow your ingredient to steep in that hot syrup for about 30 minutes and then you can store it away.

Strawberry Mojito Cocktail
Ingredients
- 4-5 fresh mint leaves (plus a good looking sprig for garnish)
- 2 strawberries quartered
- 2 oz of white rum
- ¾ oz of simple syrup
- 1 oz of lime juice cut a lime wedge for garnish
- About 2 big handfuls of crushed ice
- Soda water to top up
Instructions

Rub your mint leaves around the rim of your glass, then rip them up and place them inside the glass.

Add your strawberries, then use a muddler or the back of a wooden spoon (or something of that nature) to squash the strawberries and to muddle the mint.

Put your rum, sugar syrup and lime juice in your glass, fill the glass 3 quarters of the way with your crushed ice then give the mixture a quick stir.

Top the glass up with your soda water, add a little more crushed ice and then finish with a final sprig of mint. Enjoy!

- Don't just add the mint. Rip it and muddle it to extract the oils.
- To crush your own ice, wrap your ice cubes up in a tea towel, then use something solid to bash them.
- To make your own sugar syrup, add half water and half sugar to a pot or pan, then boil until the sugar is dissolved. To infuse the syrup, add a herb or a fruit while the syrup is still hot.
- I like to have a spoon to stir the mojito every minute because the syrup tends to sink to the bottom.
