Caramelised Onion Tart with Roasted Figs and Feta

Ingredients

  • 1 tablespoon of vegetable oil
  • 5 medium onions peeled and sliced
  • A pinch of salt
  • 2 tablespoons of brown sugar
  • 1 tablespoon of balsamic vinegar
  • 3 sheets puff pastry thawed
  • 1 egg cracked in a bowl and whisked
  • 150 g fresh figs quartered
  • Ground cinnamon
  • 4-5 sprigs of thyme leaves stripped off
  • 30 g of feta cheese
  • 1 tablespoon honey

Instructions

  1. Pre-heat your oven at 190 degrees (375 degrees F). 

  2. Pre-heat a pot over medium-high heat. Add your vegetable oil, then add your onions and a pinch of salt. Fry for about 5-10 minutes until slightly browned. Add your brown sugar and your balsamic vinegar then stir through. Fry for another 2-3 minutes. Turn the heat off and transfer the onions to a bowl. Cover the bowl with cling film and then put in the fridge to cool. 

  3. Line a large baking tray with baking paper. Put two sheets of the puff pastry on the tray with one sheet slightly overlapping the other. Get your whisked egg, then use a pastry brush to egg wash the sides of the pastry. Cut strips out of the third sheet of puff pastry, then place those strips on the egg-washed edges of the pastry on the tray. Egg wash the edges of the pastry again. Use a fork to prick some holes in the middle area of the pastry. 

  4. Once the onions have cooled down, spread them out on the pastry. Then put your fresh figs over the top, evenly spaced out. Sprinkle a few pinches of cinnamon over the top and lastly, sprinkle over your thyme leaves. 

  5. Place in the oven and bake for 18-20 minutes. Once cooked, crumble over the feta cheese and drizzle over your honey. Serve and enjoy.

Recipe Notes

  • I recommend going light when adding the honey. You don't want this tart to be too sweet. 
  • If you got frozen puff pastry sheets, make sure they are fully thawed out before cooking the tart. You don't want to serve a tart with raw pastry in the middle.
