Maple Bacon Pancakes

Super thick and fluffy pancakes topped with maple syrup glazed crispy bacon. Definitely something to be excited about in the morning.

Ingredients

  • 175 g of bacon cut into 8 even pieces
  • ½ a cup of maple syrup
  • 2 eggs
  • 250 mls (1 cup) of milk
  • 50 g of butter gently melted in a pot plus extra for frying the pancakes
  • 230 g of plain flour
  • ½ a teaspoon of baking powder
  • 3-4 sprigs of chives chopped fine
  • A good pinch of salt

Instructions

  1. Preheat your oven to 200 degrees Celsius (400 degrees F).
  2. Put an oven proof wire rack on a baking tray. Dip the bacon in maple syrup and let some of the excess drip off, then put on the wire rack. Make sure you keep the leftover maple syrup for serving.
  3. Cook the bacon in the oven for 20 minutes until crispy and golden (if you don't have a wire rack that's oven proof just put the bacon on the tray lined with baking paper).

  4. Meanwhile, whisk the egg, milk and melted butter together in a large bowl. Sift in your flour and baking powder, then add the chopped chives and a pinch of salt. Whisk the mixture until smooth and well combined.
  5. Get your pan on medium heat, then add a knob of butter. Once the butter is melted and bubbling in the pan, start adding your pancake batter about 3 spoonfuls per pancake. Cook for 2-3 minutes on each side till you achieve a nice golden colour. Add more butter whenever needed.
  6. Once you have cooked all your pancakes and your bacon is done, you can serve them however you like. You can stack them up, top with your bacon, then drizzle with maple syrup (like I did). You can serve these pancakes with berries, honey, banana slices, whipped cream etc. Enjoy these maple bacon pancakes!

Recipe Notes

  • Don't spread your pancakes too far out in the pan.

  • Don't leave your batter sitting for too long. Cook the pancakes soon after making the batter.

  • If you can, cook your bacon on an ovenproof wire rack rather than in a tray.

  • Serve these pancakes with whatever else you like. Fruit, yoghurt, honey, lemon juice etc.
