Prosciutto Wrapped Prawns With Pesto Dip Appetizer

Ingredients

Pesto Dip

  • 50 g basil leaves
  • 25 g pine nuts
  • garlic cloves peeled
  • 50 mls olive oil
  • 30 g parmesan
  • ½ a lemon juiced and zested
  • 1 tablespoon of sour cream
  • Salt and pepper for seasoning

Prawns

  • 350 g of peeled king prawns
  • 125 g of prosciutto
  • 1 tablespoon of olive oil

Instructions

Pesto Dip

  1. Put all 7 ingredients for the dip in a blender, along with a pinch of salt and pepper.
  2. Blend for 1-2 minutes until you have a smooth consistency.
  3. Keep in a bowl or container, covered in the fridge until you are ready to serve.

Prawns

  1. Cut the prosciutto into long thin trips.
  2. Wrap the prosciutto around the prawns (one strip per prawn) and then set aside.
  3. Get a couple of sheets of baking paper on a plate.
  4. Pre-heat a pan on medium-high heat. Add a glug of olive oil and then fry the prawns for about 1½-2 minutes on each side. Keep an eye on them as the prosciutto can burn quite easily if your not careful.
  5. Turn the heat off and the transfer the prawns on the baking paper to drain.
  6. Serve with the dip and enjoy.

Recipe Notes

  • This recipe makes for the best party food.
  • Don't cook the prawns any longer than 2 minute on each side. Overcooked prawns are like rubber bullets.
