The basic mayonnaise recipe. Very quick and easy to make.
Whisk the egg yolk and the Dijon mustard together in a large mixing bowl.
Add your vegetable oil bit by bit whisking through after each addition. Make sure the oil is completely mixed through before adding any more. The reason the oil must be added slowly is that if you add too much in one go, the mixture may split.
Once all of the oil is mixed through, the mayo will be very thick. Add the vinegar/lemon juice and whisk through, you'll notice that your mayonnaise will go brighter in colour and smoother in texture. Finish the mayonnaise by adding a pinch of salt and pepper.
