Ingredients

Instructions

  1. Put your ice cream and baileys in a blender, then blitz the mixture until smooth. Set aside and allow the ice-cream to melt.

  2. Wrap 2-3 handfuls of ice cubes in a tea-towel, then bash with a tenderiser, rolling pin or something of that nature until semi crushed.
  3. Fill a tall glass 3 quarters of the way up with the semi crushed ice.
  4. Mix your blood orange juice and red food colouring together, then add to the ice-filled glass.

  5. Add your vodka, and then add soda water until the glass is filled 3 quarters of the way up.

  6. Pour the melted ice-cream and baileys mixture over the blood orange cocktail very slowly (Try to pour it on the bits of ice).

  7. Serve straight away and do not mix the cocktail.

Recipe Notes

  • Mix some red food colouring through the blood orange juice to help with the redness of the drink.
  • Fill the glass with plenty of ice.
  • When you add the ice-cream, pour it in slowly. And try to pour it over the ice.
  • Serve the cocktail straight away.
  • Blended strawberries and raspberries are 2 great alternatives to blood orange juice. Although you'll still need the red food colouring.
  • If you want to make an ice-cream float style cocktail instead you can put the ice-cream back into the freezer to firm up, then scoop the ice-cream on top to finish rather than pouring it on top.
