Apple and Cinnamon Healthy Oatmeal Muffins

Super easy, super delicious, perfect when you have a busy morning. You will thank yourself when you make these oatmeal muffins.

Ingredients

Apple Sauce:

  • 115 g of peeled cored and diced pink lady apples (leave in water until ready to use)
  • 1 teaspoons of cinnamon
  • 1 tablespoon of water
  • 3 tablespoons of honey

Apple Sauce:

  1. Put the apples, cinnamon, water and honey in a pot.
  2. Start pre-heating the pot over medium-high heat.
  3. Once the mixture starts boiling, turn the heat down.

  4. Cook the apples for about 5 minutes until nice and tender, and then use a hand blender to puree the apples.
  5. Set aside and let the apple sauce cool down.

Oatmeal Muffins:

  1. Preheat your oven to 180 degrees Celsius (350 degreed F)

  2. Put your oats in a food processor with the blade attachment, and blitz the oats for about a minute or 2 until you get a fine oat powder.

  3. Put your oat flour, regular flour, salt and baking powder in a large bowl and mix together.
  4. Put your eggs, vegetable oil, yoghurt and apple sauce in with the dry ingredients and beat together until well combined.
  5. Use cooking spray to grease a muffin tin.
  6. Spoon the batter in the dips of the muffin tin, filling them about 3 quarters of the way up.
  7. Bake the muffins in the oven for 30 minutes. To test if the muffins are cooked, stick a skewer inside one of them, leave it in for 2 seconds and pull it out. If the skewer comes out clean the muffins are cooked.

Recipe Notes

  • These muffins are perfect if you don't often have the time to make breakfast.
  • I recommend that you add some honey to the applesauce to sweeten it up a bit. Otherwise, the muffin will have almost 0 sweetness (you don't have to sweeten the muffins but I personally think they're better when they have a hint of sweetness).
  • You can turn this recipe into a banana oatmeal muffin recipe by replacing the apple with banana. Just mash the banana with a fork and add it to the batter.
  • If you do make banana muffins instead, don't forget to add the honey to the batter as well.
  • Feel free to add extra pieces of fruit in the batter.
