Berry, Toasted Oat and Honey Yogurt Parfait Recipe

Honey flavoured yogurt, stewed berries and toasted oats stacked upon one another to make a quick and super tasty breakfast parfait.

Ingredients

Honey Yogurt:

  • cups of Greek yogurt (natural and un-sweetened)
  • 2 tablespoons of honey

Toasted Oats:

Berries:

  • cups of mixed frozen berries
  • 1/2 tablespoon of honey
  • 1 tablespoon of water

Instructions

Honey Yogurt:

  1. Put the yogurt and the honey in a bowl, and slowly stir together until half mixed. You want little pockets of honey rippled through the yogurt.

Toasted Oats:

  1. Preheat a pan over medium heat, then add your rolled oats. Stir the oats in the pan every 30 seconds for about 5-6 minutes until the oats have gone slightly darker in colour and are nicely toasted.

  2. Transfer to a bowl and set aside.

Berries:

  1. Put your frozen berries, water and honey in the pan, then bring to a boil over high heat.

  2. Once the berry mixture is boiling, turn the heat down and simmer the berries for a further 4-5 minutes.

  3. Once the berries have defrosted, slightly mash them down with a fork, then continue simmering for another 3-4 minutes stirring occasionally.

Assembly:

  1. Get the glass that you want to serve the parfait in, then start the layering process by adding some of your stewed berries. Then add a thin layer of oats, then a layer of yogurt, another thin layer of oats, another layer of berries, a thin layer of your oats, one more layer of yogurt and finely, sprinkle some oats on top and garnish with any herb you have available.

  2. Do this with the rest of the parfaits, then store in the fridge or freezer for a later day.

Recipe Notes

  • This breakfast parfait can be great for pregnant women. 
  • Add a thin layer of oats between each layer of yogurt and berries.
  • Serve in whatever glass or cup you like. 
  • If you're vegan, use coconut yogurt instead of Greek yogurt and use maple or golden syrup instead of honey.
  • You can freeze this yougurt parfait, just don't forget to defrost them in the fridge overnight if you plan on having one the next morning.
  • You can use flavoured yogurt, just don't add the honey because flavoured yogurts already have enough sweetness.
  • A couple of great alternatives to yogurt are ricotta and mascarpone.
  • Be careful not to burn the oats while toasting them.
