Ingredients

  • 2 oz (60 ml) white rum
  • 20 ml simple syrup
  • 1 oz (30 ml) lime juice
  • Soda water to top up
  • 1 handful of mint
  • 1 big handful of crushed ice. (if your ice isn't crushed the recipe shows you how to crush it)

Instructions

  1. If you don't already have crushed ice, get a nice big pile of ice wrapped in a tea towel, and bash it with a muddle, rolling pin, wooden spoon etc. (I personally like the crushed ice with a few small and big bits).

  2. Get your mint and take off a nice looking sprig and set the sexy mama aside.

  3. Take another 3-4 of the bigger mint leaves and rub it around the rim of your glass to give it the aroma when sipping the drink. You then want to rip up the mint leaves in half and then place it in the glass.

  4. Add your Rum, Sugar syrup and lime juice in your glass. Then top the glass 3 quarters of the way with your crushed ice.

  5. Top up with soda water for a nice fizz. Add a little more of the crushed ice and finish with the sprig of mint you took off at the start and add the lime wedge for garnish.

Recipe Notes

  • If you don't want to use simple syrup, just add a couple of teaspoons of sugar and stir it through until it's dissolved.
