Porridge with Stewed Berries

If you are tired of the same old breakfast every morning, give this recipe a go. The stewed berries take the porridge from dull to amazing.

Ingredients

  • ½ a cup of oats
  • cups of milk feel free to use almond or soy milk if you are vegan or lactose intolerant
  • A pinch of salt
  • 75 g of frozen berries of your choosing. Such as blueberries raspberries, I used a mixed variety
  • 1/2 a tablespoon of honey
  • 1-2 sprigs of mint leaves roughy chopped
  • Pumpkin seeds for sprinkling on top at the end

Instructions

  1. - Put your oats, milk and a pinch of salt in a small pot. Put on the stove on high heat. As soon as the milk start boiling, turn it down to a nice gentle simmer.
  2. - Simmer the porridge oats for about 10-15 minutes, stirring about every half a minute, making sure that the mixture doesn't stick to the bottom.
  3. - Meanwhile, put your berries in pot or pan on about medium heat. Once they start to heat up, blister and release their juices, add you honey and mint, then stir through. Turn the heat off and set aside.
  4. - Once the porridge is nice and thick, transfer to a bowl or plate. Then put your berries over the porridge (heat them up again if necessary).
  5. - Finish with one last drizzle of honey if you want and then breakfast is ready!
