Dessert Pizza with Blueberry Crust

Ingredients

  • makes 1 pizza

Pizza topping

  • 1 Orange zested
  • 25 g dark chocolate
  • 25 g white chocolate
  • 2 Canned/Jared pears in syrup cored and sliced.
  • Blueberries
  • approx. 2 tblsp. Honey
  • 1 Tsp. Vanilla extract
  • 1 Tsp. Castor sugar
  • Strawberries halved
  • Pizza dough: Makes 1 pizza
  • 125 g flour
  • 80 g water
  • Olive oil
  • 5 g dry yeast
  • A pinch of salt

Instructions

The Dough

  1. Pre-heat your oven to 210 degrees Celsius.
  2. Get your flour out on a clean surface and make a well with your hands.
  3. Add the yeast to your tepid water and stir around with a spoon.
  4. Pour the yeasty water in the well of your flour then add your pinch of salt and a drizzle of olive oil.
  5. Slowly bring the flour in with the spoon to bind it all together, then use the spoon to mix the dough around for a bit. Once the dough looks rough and is sticking to the spoon, set the spoon aside and get your hands in there.
  6. Move the dough around a bit bring everything together. Then sprinkle a bit of flour on the dough and on the surface to stop your dough from sticking so much.
  7. Next you want to knead the dough for about 5-10 minutes until it's smooth and elastic.
  8. Sprinkle a bit of flour inside a bowl, place the dough inside and then sprinkle a bit more flour on top. Cover the bowl with a damp cloth and set it aside in a relatively warm place to prove for about 45 minutes.
  9. Once the dough has proved and you can see it's risen. Then, dust your surface with flour and roll it out nice and thin. Then place it on a pizza tray or any other tray that will fit the pizza.
  10. Put your strawberries into a bowl, add the vanilla extract and castor sugar and then mix through.

The toppings

  1. Place your blueberries neatly around the edge of your rolled out dough and then drizzle the honey over the blueberries. Gently roll the edge of the dough over the blueberries and firmly seal in.
  2. Get a brush and gently dab some of the syrup that came with the pears on the middle area of the pizza.
  3. Add your pears however you wish (you can make it look really neat and sexy or you can make it look more rustic). Put your dark and white chocolate into separate bowls. Then add half the orange zest and just a dash of juice from the orange to the dark chocolate. Melt both chocolates in the microwave and then drizzle over the pizza.
  4. Add your strawberries so they bubble and burst on top.
  5. Bake your pizza in the oven for about 10-15 minutes until the dough is cooked and golden on the sides and the pizza is bubbling on top. Sprinkle the rest of the orange zest on top for garnish and serve immediately. (You can serve a slice with a nice big spoonful of ice-cream on top).
