Your duck looks very nice on it’s pretty platter, all golden brown with crispy skin.

I haven’t cooked a duck in ages but remember it was always a taste treat. I found that if I put the duck on a rack over potato wedges and some fresh rosemary leaves the duck fat will flavour them very nicely as the duck is cooking.

All my duck fat is clean and white in a glass jar in the fridge too.

I’m very proud of my roast duck dinner from Jan 2013. It was the first time I’d made it since my parents passed away. They used to bring me ducks they’d raised themselves.
