Beautiful. I call mine savory pancakes, but fritters sound so much better! But I have to disagree with you. I’ve never prepped zucchini prior to making the batter. Once the zucchini is in the batter, it doesn’t water. Whatever moisture is in the zucchini I simply balance with the amount of dry ingredients, in order to create the consistency I want. Try it sometime. You’ll see.
