Hello Nicolas. I had salmon for dinner tonight and I crisped up the skin on the second side after removing it. It was so delicious. Tasted like a super yummy chip. I took a photo. I will put it on Instagram tomorrow and tag you.

I am having salmon for dinner tomorrow. Will crisp up the skin after removing it. I find that if I cook the skin side at medium heat in a heavy duty stainless steel pan the skin crisps up well without overcooking and denaturing the protein in the salmon.
