April 4, 2017 by Nicolas 5 Comments

A wooden board with smoked trout and fennel filled bagel burger on it and fennel tips scattered around.

First of all, a bagel with cream cheese is awesome don’t get me wrong. That with a good cup of coffee in the morning is a winner. But a while ago, I was having a bagel from the coffee shop and I thought “there could be so much more in this bagel. So why not…

Seared Scallops and Fresh Salsa on Crushed Potatoes

March 29, 2017 by Nicolas 12 Comments

An eye level photo of crushed potatoes, seared scallops, fresh salsa and coriander.

Seared scallops, the two reasons why I believe that people don’t cook them in their homes often is because they usually aren’t all that cheap. Seared Sushi Nigiri

January 28, 2017 by Nicolas 4 Comments

Someone using a blowtorch to sear the salmon on the sushi nigiri.

So the first thing I will say is, this post is all about having fun. This isn’t about making traditional world class Sushi Nigiri as I am not a sushi expert. In fact, I am actually quite an amateur, however, if you have ever wondered how to make any kind of sushi, I believe this…

Pan fried snapper with grenobloise sauce

February 23, 2016 by Nicolas 1 Comment

Grenobloise sauce: Use a pot or pan to sautee (quickly frying) the lemon segments and capers in the unsalted butter then set aside. Quickly heat up the mash potato on the stove and/or the tomatoes in the oven if need be. Feel free to serve everything any sexy way that you want. Have fun (:

I’m not going to say that this is the best way to cook fish, because I’ll probably never find out everything there is to know about fish even if I tried. However, in my experience, simply just pan frying in butter is such a good way to go. when/if you go ahead and make this…
