Well, guess what, when you make Julia’s recipe, you won’t have that disappointment because you’ll know that there is plenty more waiting for you in the near future.
Broccoli Cheese Quiche and Sweet Potato Hash by Sarah From Slice of Honey: We all love the good old broccoli and cheese combo in a tray bake dinner. So I thought it was so clever to incorporate that combination in a quiche. As quiches are perfect for meal prep!! You can have them cold or hot, and they’re so easy to store and move around. Way to go Sarah!!
Red Lentil, Tamarind and Tomato Soup by Elizabeth from Cuisine D’eli: We all know that amazing soups like this taste better the next day. So you can only imagine how happy you’d be when you first get frustrated for not knowing what do have for lunch, then realizing that you got a pot of this stored in the fridge!!
Vegan Meal Prep Chili by Kathy from Holistic Hormone Help: Meat or not, that doesn’t come to mind at all when I see this dish. All I think to myself is “YUM!”. And when it comes to meal prep, it’s tough to beat something like an amazing comforting chilli dish like this!
Pumpkin, Ricotta and Sage Pasta Shells by Alexandra from It’s Not Complicated Recipes: Now here is where I applaud Alexandra because she has really thought outside the box here. These stuffed pasta shells would not only be awesome for general meal prep, but she made this recipe for dinner party meal prep!! How amazing is that!? No one likes to run around the kitchen stressing out getting dinner ready for a bunch of guests. So this idea is gold to me, plus it’s something new and inspiring.
Instant Pot Ropa Vieja by Will From Hangry White Male: Will did an incredible job of this post!! He put so much time and effort into this and you should definitely check it out and show him some love! Not only did he make an incredible Roba Vieja recipe, but he also made a bunch of other recipes that would go perfectly with the delicious flank steak to make up 6 of these amazing Ropa Vieja meal prep boxes! His post also involves a recipe for cilantro lime rice, Cuban black beans and tostones.
Thai Green Chicken Curry by Me!!: And no you won’t be buying store-bought paste, you’ll be making your own curry paste!! So you can control how chilli you add! Also, if you don’t muck about, you can get this dish done in 30 minutes or less. So definitely worth checking this recipe out and if you make it, let me know how you got on.
Easy Mexican Lasagna by Jen From Real Food Happy Home: Yep, you read that right. Jen came up with an idea that is new, different, fresh and she executed it perfectly. We got tortillas, we got enchilada sauce, we got spices all combined together to make the most epic lasagna. By far one of the coolest meal prep ideas I have ever seen!!
Instant Pot Stuffed Peppers by Maggie from Meals with Maggie: Stuffed peppers that are far from boring and far from tasteless. Oh what’s that?…..you don’t have an instant pot? Oh, what’s that?…….you’re a vegetarian…..not to worry, Maggie’s got your back!!
Garlic Shrimp Skillet with Bulger by Laura from Healthy Laura: Now this is definitely my kind of meal prep idea!! Working with an ingredient that most people haven’t worked with (bulgur) and pairing it with other incredible ingredients. Side note, Laura is the queen of food photography so definitely check out her work!!
Make Ahead Mini Fritattas in Muffin Tins by Stephanie from 31 Daily: I mean…..could it get any easier, straight forward and delicious!? I think not. As you can see, Stephanie has made 3 different frittatas, so we got 3 recipes in 1 post!! Absolutely amazing.

I’ve been super into meal prepping lately! I always found the thought daunting but I’m such a believer in it now and it makes life super easy during the week and helps me keep track of portions etc. These all look so delicious…I don’t know which one I’d like to try first! 😀 Great roundup!

I really don’t know which one I’d want to make first. They all sound amazing!! The risotto is calling to me — I think that one will hold a special place in my heart and tummy.

These are all such great ideas for easy meal prep! It’s nice to get some of the hard work out of the way at the beginning of the week and still come home to a great meal at the end of the following day!

So many amazing meal prep ideas in one spot! I am definitely trying the Ropa Vieja – it’s one of my favorites and I love how creative he was in preparing it a bunch of different ways.
